32 32 The CBPG Magazine 14th December th January 2018 Issue 14 The Costa Blanca Property & Business Guide Looming Brexit deadline leaves GBP unsettled, ECB decision ahead Staying on top of the latest currency news can help you time your transfers more effectively, so find out what you should be looking out for over the next couple of weeks Latest currency news Over the course of November the GBP/EUR exchange rate fluctuated between highs of 1.14 and lows of 1.10, before ultimately closing the month at EUR/GBP shifted between 0.87 and Meanwhile, GBP/USD steadily climbed from $1.30 to $1.35. What s been happening? Although the UK budget turned out to be something of a non-event, the pound spent the second half of November strengthening in the hope that the UK would make enough progress on key Brexit issues to move on to trade talks before the end of the year. Now that Prime Minister Theresa May has successfully crossed this bridge, we can look forward with some confidence to the December EU summit. The euro, meanwhile, proved resilient in spite of the collapse of coalition talks in Germany. However, below-forecast inflation data and disappointing retail sales figures applied pressure to the common currency later in the month as the reports added to the argument in favour of the European Central Bank (ECB) maintaining an accommodative stance on monetary policy. The US dollar experienced a volatile few weeks of trading, alternately gaining on optimism for President Donald Trump s tax reforms and declining on concerns surrounding the Trump-Russia probe. What do you need to look out for? The last few weeks of 2017 are set to be jam-packed with currency volatility. Focus will now be on negotiations on the nation s post-brexit trade relationship with the EU and a transitional deal, now that Stage 1 is complete. The EU summit on the 14th/15th December will be crucial. A positive outcome from this gathering could send the pound shooting higher, while any setbacks would leave Sterling struggling heading into the New Year. We also have three influential central bank meetings to contend with, starting with the Federal Reserve s on the 13th. The odds of the Fed raising interest rates at this gathering have sat at over 90% for months, so an increase in borrowing costs might not give the US dollar much of a boost when it occurs. In fact, if the Fed is cautious on the future path of monetary policy and implies that rate hikes might not be so frequent in 2018 the US dollar could tumble, sending the euro higher in the process. 14th December sees both the Bank of England (BoE) and European Central Bank (ECB) delivering interest rate decisions. The BoE increased borrowing costs for the first time in over a decade in November, but implied that we shouldn t expect another adjustment for some time. If policymakers are similarly cautious this time out it would weigh on demand for the pound although the impact of the decision is likely to be limited in light of the EU summit. The ECB rate announcement is also unlikely to result in any adjustments to monetary policy, so any euro movement will be the result of hints for the future. 36 36 The CBPG Magazine 14th December th January 2018 Issue 14 The Costa Blanca Property & Business Guide CYCLOGICAL December 17 by Gary and Lynn from Cyclogical in Quesada ROAD TRIP TO ALTEA 2017 On Saturday 28th October 2017 twelve of us left the shop at 2pm accompanied by our wives and partners and travelled in convoy along the AP7 to the Cap Negret Hotel in Altea for a cycling weekend in the hills. Unfortunately as we left Quesada the heavens opened and it poured all the way to Altea. When we arrived we checked in and squared our bikes away in the storage area provided for cycling teams (a large room suitable for 20 bikes, kit etc., with shower, toilet, and washing machine). Because of these great facilities, most of the top teams that train in and around the Calpe / Altea area now use the Cap Negret Hotel as their headquarters. Due to the weather we decided just to go to the bar and spent most of the afternoon there. On Sunday morning we were all up bright and early for breakfast and ready to hit the road by 9am. We left Altea and quickly picked up the lovely twisty road to Guadalest. Considering all the rain the day before it was a fantastic sunny day with only the occasional damp patch on the roads. When we reached Guadalest it was already quite busy with tourists but we found a restaurant and had a coffee and tostada and the waitress even came out with a cake with a candle as it was Harry s 19th birthday! After 30 mins we were off again heading down the way that we had just come up only this time much faster as it was quite a climb up! We got to Callosa de Sarria just making it through the town as they were busy setting up for a Fiesta and there were people everywhere - 10 minutes after we passed the roads were closed. We headed for Fonts de la Algar on the Bolulla road which took us to Tarbena where we had another stop, this time for a coke and an ice cream, then continued on this road heading for Coll De Rates. This was a fantastic road - steep but with magnificent views which we stopped and took pictures of. Once we reached the top we took loads of pictures at the viewpoint where there is a restaurant - again really busy as it was a national holiday weekend. We then set off down the Coll de Rates at a considerable pace passing through Parcent, Alcalali and Xalo finally reaching Benissa, picking up the N332 to Calpe where we stopped and had a menu del dia and a few beers. After lunch we picked up the N332 again and followed it all the way back to the Hotel in Altea where we parked up the bikes, got changed and had a swim in the pool then relaxed in the sun with yet another beer. It was lovely and quiet and, as we were back before Lynn and the girls (who had caught the train outside the hotel to Denia for lunch and a look round). When the girls got back we all had about an hour in the sun before getting changed and meeting up in the Dining room for dinner which was brilliant. Monday morning all bright eyed we had breakfast and left the hotel all doing our own thing on the way back to Quesada. All in all a great weekend away. Here s looking forward to returning again in April next year! We have a saying in Sweden there s no such thing as bad weather, only bad clothes. A passion for nature cuts to the heart of what Scandinavians call friluftsliv (pronounced free-loofts-liv). The expression literally translates as open-air living It s a very big part of our lives, to be able to see the greenery and the water and the forests, adds Bo Wahlund, a packaging developer who organises the group. It strengthens our mental and physical abilities. Their passion for nature cuts to the heart of what Scandinavians call friluftsliv (pronounced free-looftsliv). The expression literally translates as open-air living and was popularised in the 1850s by the Norwegian playwright and poet, Henrik Ibsen, who used the term to describe the value of spending time in remote locations for spiritual and physical wellbeing. Today, the phrase is used more broadly by Swedes, Norwegians and Danes to explain anything from lunchtime runs in the forest, to commuting by bike (or on cross-country skis when the snow falls) to joining friends at a lakeside sauna (often followed by a chilly dip in the In Sweden, there are 1.7 million memberships across 900 regional and local friluftsliv-related clubs across the country water) or simply relaxing in a mountain hut. The concept is also linked closely to allmansrätten, the right to roam. Scandinavian countries all have similar laws which allow people to walk or camp practically anywhere, as long as they show respect for the surrounding nature, wildlife and locals. The great outdoors The history of outdoor life in the Nordics is long and really incorporated with the culture, since we have a lot of land and a small population, explains Angeliqa Mejstedt, who runs one of the region s largest outdoor blogs, Vandringsbloggen, from the Swedish city of Västerås. Even after we became more urbanised we had this longing to get back to nature and for the last 100 years a lot of voluntary organisations like the Scouts and the tourist boards have organised Outdoor activities in Sweden have long been a culturally important institution as a means of work-life balance and educated people about how and why to spend time outdoors, says the writer, who also works as a consultant advising businesses and new immigrants on the history and benefits of friluftsliv. Their club is able to meet every week, thanks to a company policy that blocks 90 minutes out of employees calendars every Wednesday In Sweden alone, a country of 10 million people, there are 25 non-profit associations anchored to friluftsliv, with 1.7 million memberships spread across 9,000 local and regional clubs. Research for Statistics in Sweden, the government s number-crunching agency, suggests that around a third of Swedes engage in outdoor activities at least once a week. More than half of the population have access to a summer house in the countryside or on the coast. Many Scandinavian employers also incentivise staff to spend time outside during their working hours. The shiny activewear sported by pharmaceutical workers like Wahlund and Holme hint these are people who schedule exercise without any help from their bosses. But their club is able to meet every week thanks to a company policy that blocks 90 minutes out of employees calendars every Wednesday. Noone is forced to exercise, but a majority of staff choose to, with many making a beeline for the surrounding woodland. Wahlund finds it funny when cool companies like Apple or Google make headlines for testing out similar initiatives, noting that in Sweden it s regular, there s a lot of companies doing it. Deciding when to work With flexible hours already commonplace in Scandinavia, thanks to policies encouraging both parents to participate in family life, many businesses are also giving employees the chance to work around their passions including the great outdoors more regularly. We have a very free work environment and believe that our employees work best when they decide when to work, says Jakob Palmers, the co-founder of Graphiq, a design agency based in the Norwegian capital, Oslo. That means people can go and experience friluftsliv when the sun is up and work when it s dark. You get a different perspective as soon as you get out of the building, Palmers says. There are even tax breaks for firms that incentivise friluftsliv: firms in Sweden and Finland can subsidise employees sports activities or equipment, while some Finnish businesses are starting to pay compensation to employees if they cycle or walk to work. We want to do exciting stuff, we want to travel, we want to go to see new places, meet new people. It s a matter of making choices - Angeliqa Mejstedt But Angeliqa Mejstedt insists that the success of her blog, and the more than 100 hikes she s organised in 23 locations over the past year, are a sign that friluftsliv continues to inspire young Scandinavians and that the concept has found new ways to thrive in a more digital world. The more screen time we have, the more we need to get back to basics. But I think that the digital area can help us in many ways, it makes it easier to plan adventures for example with modern apps, she says. I ve also found a lot of mindfulness in taking pictures because it makes me add more value to being outdoors and I think it could be the same for other people as well. She s also convinced that while other countries might not have the same history or infrastructure when it comes to promoting friluftsliv, it s still a concept that can be quickly exported. Have you got the wrong impression Courtesy about schizophrenia? BBC Health Section Schizophrenia does not mean you have a split personality or automatically become violent, a mental health charity has warned. Rethink Mental Illness said a survey of 1,500 people showed that the condition is widely misunderstood. Schizophrenia commonly causes hallucinations, such as hearing voices, or delusions and can make people lose interest in life. But it should not be a dirty word or a term of abuse, the charity said. The organisation warned such myths are dangerous. One in 100 people is affected by schizophrenia during their life, but 45% of those surveyed thought the illness was much more common. Half mistakenly thought the illness was defined by a split personality and a quarter believed it definitely led to violent behaviour. But the reality is very different, a new campaign by the charity claims. It is not true that someone with schizophrenia can appear perfectly normal at one moment, and change into a different person the next, the Royal College of Psychiatrists says on its website. And although there is a higher risk of violent behaviour if you have schizophrenia, it does not necessarily make people dangerous. Comparatively, drugs and alcohol cause far more violence. People with schizophrenia are far more likely to be harmed by other people than other people are to be harmed by them, the psychiatrists Brain scans have discovered higher activity levels in part of the brain s immune system in schizophrenia patients than in healthy volunteers say. Schizophrenia can affect the way individuals think, feel and behave. Experiencing hallucinations is common and people often hear voices, which can sound very real and be critical and abusive, although they are all in the mind. Delusions can occur too, which means believing something completely and feeling like no-one else sees the world in the same way. Other symptoms can include depression, loss of concentration and feeling uncomfortable around other people. Some people also have painful feelings in their body. The Rethink Schizophrenia campaign said the illness can affect other aspects of life too - for example people with schizophrenia die 15 to 20 years earlier than the rest of the population on average. And only 8% of those with the illness who want to work are currently employed. The charity said this is because physical health problems are often missed or attributed to mental illness, and the side-effects of medication can cause complications. Change attitudes Brian Dow, director of external affairs at Rethink Mental Illness, said: It s about time we all got to grips with what schizophrenia is and what it isn t. Schizophrenia can be treated and managed, just like many other illnesses. It s not a dirty word or, worse, a term of abuse. He added that myths stopped people from getting jobs, forming relationships and getting access to the healthcare they needed. The symptoms of schizophrenia don t fit neatly into a box, everyone will experience it differently, he said. However, we can all play a role in rethinking schizophrenia, and helping to change attitudes, by learning to separate the myths from the facts. Prof Wendy Burn, president of the Royal College of Psychiatrists, said it was astounding that schizophrenia was still so widely misunderstood. To tackle the stigma that so many living with schizophrenia face, we have a huge task ahead of us in informing and educating the public, she said. We also need to ensure that more medical students choose psychiatry so that those living with schizophrenia have specialist doctors available to treat them.

44 44 The CBPG Magazine 14th December th January 2018 Issue 14 The Costa Blanca Property & Business Guide SEVEN CHARTS THAT EXPLAIN THE PLASTIC POLLUTION PROBLEM Marine life is facing irreparable damage from the millions of tonnes of plastic waste which ends up in the oceans each year, the United Nations has warned. This is a planetary crisis... we are ruining the ecosystem of the ocean, UN oceans chief Lisa Svensson told the BBC this week. But how does this happen, where is most at risk and what damage does this plastic actually do? Why is plastic problematic? Plastic as we know it has only really existed for the last years, but in that time it has transformed everything from clothing, cooking and catering, to product design, engineering and retailing. One of the great advantages of many types of plastic is that they re designed to last - for a very long time. And nearly all the plastic ever created still exists in some form today! In July a paper published in the journal Science Advances by industrial ecologist Dr Roland Geyer, from the University of California in Santa Barbara, and colleagues, calculated the total volume of all plastic ever produced at 8.3 billion tonnes! Of this, some 6.3bn tonnes is now waste - and 79% of that is in landfill or the natural environment. This vast amount of waste has been driven by modern life, where plastic is used for many throwaway or single use items, from drinks bottles and nappies to cutlery and cotton buds. Four billion plastic bottles... Drinks bottles are one the most common types of plastic waste. Some 480bn plastic bottles were sold globally in that s a million bottles per minute. Of these, 110bn were made by drinks giant Coca Cola! Some countries are considering moves to reduce consumption. Proposals in the UK include deposit-returning schemes, and the improvement of freedrinking water supplies in major cities, including London. So, how much plastic waste ends up in the sea? It s likely that about 10m tonnes of plastic currently ends up in the oceans each year. In 2010 scientists from the National Center for Ecological Analysis and Synthesis and the University of Georgia in Athens estimated the figure as 8m tonnes, and forecast that to rise to 9.1m tonnes by The same study, published in the journal Science, in 2015 surveyed 192 coastal countries contributing to ocean plastic waste, and found that Asian nations were 13 of the 20 biggest contributors. China was top of the list of countries mismanaging plastic waste, but the US also featured in the top 20 and contributed a higher rate of waste per person. Plastic waste accumulates in areas of the ocean where winds create swirling circular currents, known as gyres, which suck in any floating debris. There are five gyres around the globe, but the best known is probably the North Pacific gyre. It is estimated debris takes about six years to reach the centre of the North Pacific gyre from the coast of the US, and about a year from Japan. All five gyres have higher concentrations of plastic rubbish than other parts of the oceans. They are made up of tiny fragments of plastic, which appear to hang suspended below the surface - a phenomenon that has led it to being described as plastic soup. And the hardwearing qualities of most plastics means that some items can take hundreds of years to biodegrade! However, there are moves to clean up the North Pacific gyre. An operation led by a nonprofit organisation Ocean Cleanup is due to begin in How bad are things in the UK? The Marine Conservation Society found 718 pieces of litter for every 100metre stretch of beach surveyed during their recent Great British Beach Clean Up. That was a 10% increase on last year. Rubbish from food and drink constituted at least 20% of all litter collected, the MCS (marine Conservation

Turtles cannot distinguish between plastic bags and jellyfish, which can be part of their diet. Plastic bags, once consumed, cause internal blockages and scientists concern. A recent survey by Plymouth University found that plastic was found in a third of UKcaught fish, including cod, haddock, mackerel and shellfish. This can increased risk to human health and food safety given the potential for micro-plastic pollution in edible tissues of commercial fish. Loggerhead turtle trapped Hundreds of marine turtles die every year after becoming entangled in rubbish in the oceans while others are forced to live attached to debris bigger than their own bodies, a new study has found. A world-wide survey of 106 marine experts by the University of Exeterfound that 91 per cent of the entangled turtles are found dead with many having suffered serious wounds which have amputated limbs or chocked them to death. Others that survived are forced to drag huge mounds of disgarded rubbish or debris with them until they die, experts said. The throwaway plastic we use for just minutes can turn into a floating trap for marine creatures that lurks in our oceans for centuries. Greenpeace UK s head of oceans, Will McCallum The survey found that more than 1,000 turtles each year are being killed after becoming tangled up in lost fishing nets, plastic twine and nylon fishing line, as well as six pack rings from canned drinks, plastic packaging straps, plastic balloon string, kite string, plastic packaging and discarded anchor line and seismic cable. Turtles were also discovered entangled in discarded plastic chairs, wooden crates, weather balloons and boat mooring line. Professor Brendan Godley. Professor of Conservation Science and Director of the Centre for Ecology & Conservation at the University of Exeter s Penryn campus and the lead author warned that as plastic pollution increases more and more turtles are likely to become entangled. Plastic rubbish in the oceans, including lost or disgarded fishing gear which is not biodegradable, is a major threat to marine turtles, he said. We found, based on beach strandings, that more than 1000 turtles are dying a year after becoming tangled up, but this is almost certainly a gross underestimate. Young turtles and hatchings are Sarah Knapton, Science Editor, The Telegraph particularly vulnerable to entanglement. Experts we surveyed found that entanglement in plastic and other pollution could pose a long term impact on the survival of some turtle populations and is a greater threat to them than oil spills. We need to cut the level of plastic waste and purse biodegradable alternatives if we are to tackle this grave threat to turtles welfare. Prof Godley urged beach-goers walking over Christmas to collect plastic debris before it is washed back out to sea. It is something that can make a concrete difference, if everyone out on their Christmas walk picked up the rubbish they find on the beach. The Exeter University research team, which included two research students Emily Duncan and Zara Botterell who work in conjunction with Plymouth Marine Laboratory, surveyed Leatherback turtle entangled in fishing ropes which increases drag experts who rescue and rehabilitate stranded turtles in 43 countries, to find out if they had discovered turtles which had been tangled up. They also found 23 reports of entangled turtles in peer-reviewed publications, magazines, newspapers and reports.84 per cent of the 106 experts surveyed, said they had found turtles tangled in rubbish, in the Atlantic, Pacific Caribbean, Mediterranean and Indian ocean coast. Although they found more than 1,000 entangled turtles, they believe the real number is far higher because many animals will decay at sea. By Diana Spechler, BBC Travel At Akramawi, a 65-year-old hummus joint by Damascus Gate in Jerusalem, a cook named Nader Tarawe was showing me how to prepare hummus. The recipe for hummus b tahini (as the dish is named; hummus simply means chickpeas ), consists of chickpeas, tahini, garlic and lemon. Since it s relatively simple to make, the variations lie more in how it s served. Should it be it smooth or lumpy, heavier on the tahini or on the chickpeas, crowned with fava beans or more chickpeas or pine nuts or ground beef? And what s on the side? Chips? Pickles? Hot sauce? Falafel? Tarawe topped each plate of hummus with a dollop of tahini and a sprinkling of olive oil. Oil is good, he said, an accidental Middle East metaphor. Hummus is a regional metaphor, too: beloved all over the world, it s yet another source of tension, yet another question of proprietorship. Who invented the dish? Who can claim it as their own? Hummus b tahini consists of chickpeas, tahini, garlic and lemon Everyone from the Greeks to the Turks to the Syrians have tried, but there s little evidence for any theory. Most of the ingredients have been around for centuries: the chickpea dates back more than 10,000 years in Turkey and is, according to Anissa Helou, Syrian-Lebanese author of several Middle Eastern cookbooks, one of the earliest legumes ever cultivated. And tahini, the sesame paste that is vital to hummus b tahini, is mentioned in 13th-Century Arabic cookbooks. But the combination of ingredients that make up the popular dish is harder to pin down. Hummus is a regional metaphor: beloved all over the world, it s yet another source of tension It s a Jewish food, said chef Tom Kabalo of Raq Hummus in Israel s Golan Heights a few days later. It was mentioned in our bible 3,500 years ago. I was in his restaurant eating his Tuesday special. Because it was October, the special was Halloween hummus, garnished with shredded pumpkin and black tahini. He s not the only one who told me that hummus is biblical. Kabalo and others are referring to a passage from the Book of Ruth, part of the third and final section of the Hebrew Bible: Come hither, and eat of the bread, and dip thy morsel in the hometz. While it s true that hometz does sound like hummus, The chickpea dates back more than 10,000 years in Turkey and is said to be one of the earliest legumes ever cultivated there s also a good reason to believe otherwise: in modern Hebrew, hometz means vinegar. Of course, dip your bread in vinegar would be an odd expression of hospitality, so therein lies the uncertainty. I ve heard claims that it was first cultivated in northern India or Nepal, said Oren Rosenfeld, writer and director of Hummus! The Movie. Said Liora Gvion, author of Beyond Hummus and Falafel: Social and Political Aspects of Palestinian Food in Israel, I think it is an old and stupid debate that is not worth one s attention. But for many, the question of where hummus comes from is absolutely a matter of patriotism and identity. The now legendary Hummus Wars began in 2008 when Lebanon accused Israel of cashing in on what they believed should have been Lebanon s legacy, publicity and money. The president of the Association of Lebanese Industrialists, angry that hummus had come to be known and marketed throughout the west as an Israeli dish, sued Israel for infringement of food-copyright laws. The Lebanese government petitioned the EU to recognise hummus as Lebanese. Both efforts proved ineffectual. The question of where hummus comes from is absolutely a matter of patriotism and identity Cultural appropriation is a hot topic in the food world (just ask the Peruvians and Chileans who owns pisco, for example), so the hummus debate could have generated an interesting conversation. Instead, the whole thing devolved into the culinary version of a dance-off: in 2009, Fadi Abboud, Lebanese minister of tourism, decided that the way to settle the matter once and for all was for Lebanon to make a plate of hummus so large it would be recognised by the Guinness Book of World Records. The goal was achieved, the record set with a plate of hummus that weighed around 2,000kg. In response, Jawdat Ibrahim, a famous Arab-Israeli hummus joint in Abu Ghosh, Israel, retaliated with hummus served in a satellite dish that had a diameter of 6.5m about 4,000kg of hummus. Then the Lebanese counterattacked with 10,452kg of the dip the number of square kilometers of Lebanon. They have held the record since Lebanon s efforts were interesting, but they can t be taken seriously, Rosenfeld said. Hummus is a Middle Eastern food claimed by all and owned by none. Most people who talk about the Hummus Wars hold Rosenfeld s diplomatic view. But American food historian Charles Perry, president of the Culinary Historians of Southern California and an expert on medieval Arab food, gives Lebanon some credit. Hummus is a Middle Eastern food claimed by all and owned by none I tend to take the Lebanese claim somewhat seriously, he said. Beirut would be my second choice in response to the question of who invented hummus. It stood out as a sophisticated city throughout the Middle Ages, one with a vigorous culinary tradition, and lemons were abundant there. But Damascus, Syria, strikes him as the more likely candidate. He explained that the traditional way of serving hummus throughout much of the Middle East is in a particular red clay bowl with a raised edge. The hummus is whisked around briskly with a pestle so that it mounds up along that edge. Not only does this present the hummus conveniently for picking up with bread, it proves that the hummus has the proper texture, neither too slack nor too stiff. The practice of whipping hummus up against the wall of the bowl indicates a sophisticated urban product, not an ancient folk dish. I m inclined to think hummus was developed for the Turkish rulers in Damascus, Perry said. Explaining his choice, he continued: Nobody can say who invented hummus, or Hummus is traditionally served in a red clay bowl with a raised edge Cookbooks from 13th-Century Egypt describe a dish similar to hummus, made of cold pureed chickpeas, vinegar, pickled lemon and herbs and spices when. Or where, particularly given the eagerness with which people in the Middle East borrow one another s dishes. But I associate it with Damascus in the 18th Century because it was the largest city with a sophisticated ruling class, he said. However, another popular theory says that hummus is neither biblical nor Lebanese nor Syrian, but Egyptian. The earliest recipe I ve seen for hummus Lebanon holds the Guinness Book of World Records for largest plate of hummus, weighing 10,452kg that includes tahini is from an Egyptian cookbook, said Middle East historian Ari Ariel, who teaches history and international studies at the University of Iowa. But is it fair to consider those recipes hummus b tahini if there s no tahini? No garlic? The thing you have to bear in mind about historical cookbooks, Perry said, is that they tend to record fashionable dishes, and fashionable dishes eventually become unfashionable, so a modern dish that somewhat resembles an ancient one The exact origin of hummus is still highly contested may not have a historical connection. In response to the Egypt theory, he continued, Historically, Egypt has been more likely to adopt Syrian dishes than vice versa. Back at Akramawi, I sat at a communal table where I met Noam Yatsiv, a tour guide from the Israeli port city Haifa, who takes his hummus very seriously. He told me that he eats hummus five times a week and has a dog named Hummus, and that hummus comes from Syria, Lebanon, Israel and Palestine. All of them? I asked. Yatsiv shrugged. He told me that it doesn t matter where it s from. What matters is the way it s been co-opted and sold commercially in grocery stores in plastic containers. That s not hummus! he said, tearing a piece of pita. There should be a sign on that hummus the way there is on kosher shrimp. It should be labelled fake hummus. There should be an international law. Most of the people I spoke with couldn t agree on where hummus comes from, or on the extent to which it matters. Kabalo said that the more important question is, who s making it the best? ( You re looking at him, he added, spreading his arms.) But the hummus solidarity I found on my travels was the result of a different question. There was common ground among just about everyone I met who make hummus for a living from Tarawe at Akramawi to the Christian Maronite family who run Abu George Hummus in the Old City of Acre, Israel, to the hipsters at Ha Hummus Shel T china in Jerusalem s Nachlaot neighbourhood who give their leftover hummus to the homeless each night every time I asked, What s your secret ingredient?
