31 16th February - 14th March 2018 Issue 16 The CBPG Magazine 31 THE DISEASE THAT COULD CHANGE HOW WE DRINK COFFEE By Jose Luis Penarredonda For years, researchers in Colombia have been engaged in a little-known battle against a disease that could disrupt coffee drinking everywhere. If you landed in Bogota in the 1960s, one of the first things you would have probably seen outside the airport was a giant billboard. In a slightly menacing tone, it said: Coffee rust is the enemy. Don t bring plant materials from abroad. It was one of the first warnings about a foe that has been threatening Colombia s coffee trade ever since. Coffee rust looks like a brown powder on the leaves Coffee rust is a disease with the power to cripple, or even wipe out, the country s national product, the base of one of its biggest industries, and one of its most important sources of foreign currency. Last year alone, its coffee exports were worth $2.4bn ( 1.8bn), and were 7.7% of all goods the country sold overseas. That makes Colombia the third largest producer of coffee in the world. In other words, if rust takes hold there and global supply dwindles, it will affect the price of the coffee we drink everywhere. That s why for the past few decades, Colombia s scientists have been engaged in a little-known battle with the disease, staged from a small laboratory deep inside the mountains of Colombia s coffee axis. The question is, can Colombian coffee s distinct flavours survive intact? Coffee rust has plagued farmers for more than a century. When a tree gets infected by it, its leaves produce a brown, thin powder when scratched, pretty much like iron rust. In the end, the tree loses all its leaves, as well as its ability to produce beans. If left unattended, the disease can have dramatic consequences. In the late 19th Century, Sri Lanka, the Philippines, and other countries in Southeast Asia were the major exporters of coffee in the world. In a matter of decades, the disease meant they practically stopped growing it. Historians suggest that this is part of the reason why Britons prefer tea nowadays. Sri Lanka moved over to tea production since coffee was no longer profitable, explains Aaron Davis, head of coffee research at Royal Botanic Gardens, Kew. Luckily for Asian producers, Britain was eager to switch its taste when their coffee supply vanished. Beauty vs Beast What makes coffee rust a particular worry for Colombia is that it attacks the type of coffee that the country relies on and that coffee lovers have got used to drinking. Coffee comes in two varieties. We could call them the beauty and the beast. The beauty is Coffea arabica. Its seed gives a delicious and delicate brew that sells at good prices in international markets. This is the variety that made Colombian coffee so famous. The beast is Coffea canephora, also known as To get rated as a premium quality grade, farmers must focus on small details robusta. It is a tougher tree, with more resistant leaves, that is cheaper to grow and crop. Unfortunately, coffee rust attacks the beauty, but not the beast. Colombia only exports beauties, so switching has never been an option. In the 1960s, a team of scientists at a research laboratory called Cenicafe set out to find a solution that drew on the best features of the two varieties but it wouldn t be straightforward. The laboratory To get to Cenicafe, you have to drive all the way to the top of a mountain; the twisting roads can make you sick if you are not used to them. The lab is nested there to keep its 89-year-worth body of research away from the force of nature: the prior building flooded after a volcano eruption in It was set up by the Colombia s National Federation of Coffee Growers (also known as Fedecafe), the coffee industry association in the country, and is considered a global flagship centre for the science of coffee. Today, the laboratory s work is regarded as the gold standard in the fight against the most acute threat against coffee in the Americas, says Michael Sheridan, director of sourcing and shared value at Intelligentsia Coffee Roasters, a specialty coffee importer in the US. To save Colombia s coffee, Cenicafe scientists in the 1960s realised that they needed to breed new varieties that could inherit both the distinctive taste and aroma of Colombian beauty, and Colombia is the third largest producer of coffee in the world the resistance genes of the beast. To do so, they had to get those genes somewhere: the beauty and the beast don t usually interbreed. The solution, they found, would come from the other side of the world. From Timor with love At some point in recent history, something weird happened in Timor. Somewhere in this small island in the Indian Ocean, halfway between Indonesia and Australia, the beauty and the beast had an affair of sorts. As a result, the Timor hybrid was born. This naturally occurring hybrid of arabica and robusta was found in 1927, and started to be harvested in It is not really a great tasting berry, but it had a crucial feature: unlike normal robusta, it can be bred again with arabica varieties, which means that it can transmit its rust resistance to them. Cenicafe began its efforts to combat rust in 1968, knowing that rust from overseas would arrive in Colombia soon. It started a project to created cultivars of the bush that resist it. It was not just a matter of putting two varieties in a genetic blender. The real work was to interbreed five generations of trees, and select those that provided a better taste and more delicate aroma, as well as a shorter tree, good productivity for growers and resistant to different races of the Hemileia fungus. In 1980, the centre released its first hybrid of Caturra the dominant variety grown in the country and the Timor hybrid. It was called Colombia, and it was good enough for it to be well accepted by growers and buyers, to the point that it still is around in many of the country s coffee farms. It was just in time. Three years later, coffee rust was first identified in Colombia. By increasing the gene pool, coffee scientists also aim at protecting the crops from other risks. If you reduced genetic diversity, you have less resistance to climate, pests and diseases, explains Davis. Lack of diversity has proven disastrous to other commercial crops. Almost all bananas you can buy today in most parts of the world are clones from a single parent plant called Cavendish, initially bred in Britain in the 19th Century. It was not the tastiest fruit, but it was resistant to the fungus that wiped out the world s most popular variety in the mid-20th Century, the Gros Michel. The fungus mutated and now it can kill Cavendish, which means that the extinction of the banana as most of the world knows it is on the cards. Coffee scientists have heard the cautionary tale. Intelligentsia s Sheridan spent many years deep inside Colombia as a development worker. He saw how small coffee farmers gamble everything to get a good yield. They take very high risks, and if something goes wrong, their families pay a hefty toll. That is why he believes varieties like Castillo made coffee viable for many small farmers, who now have a reasonably priced and less risky option. Key numbers Once a year, in front of a panel of cuppers (the expert In coffee flavour tasting, a score of more than 80 out of 100 is considered specialty grade tasters of this industry), coffee farmers put all their hard work on the line. Their goal is to reach a magic number: 80. Tasters rate a coffee s flavour with a score out of 100 assessing fragrance, body, sweetness and more. A rating of 80 is the minimum to be considered specialty, and therefore sold at higher prices than the market average. Some buyers are even pickier: they demand an 83, or even an 87. Of course, they pay due premiums for the extra quality. Castillo is also near Eduardo Florez s heart. He is a Colombian entrepreneur who has a stall in the Borough Market in London, where he sells the coffee he roasts in his garage in Brighton. He sources small batches for his business, and has found some very special Castillos. Once I saw one that had peach notes, he points out, excited. Imagine how delicate is that! 32 32 The CBPG Magazine 16th February - 14th March 2018 Issue 16 The Costa Blanca Property & Business Guide GBP/EUR boosted by hawkish BoE policy outlook The last four weeks have been rather mixed for the pound, with Brexit-based uncertainty tempering the impact of a more hawkish Bank of England (BoE) policy outlook. As a result, the GBP/EUR exchange rate climbed to a nine-month high of 1.14 before retreating once again as market confidence diminished. Continued US dollar softness has helped to shore up the euro, meanwhile, even as the odds of an imminent Federal Reserve interest rate hike have increased. What s been happening? Although the BoE voted unanimously to leave interest rates on hold at its February policy meeting, the mood towards the pound nevertheless improved in the wake of the decision. This was due to the more hawkish nature of the latest quarterly Inflation Report, which saw an upward revision to the Bank s growth forecasts. Investors took this as encouragement to bet on the prospect of the BoE raising interest rates again in the coming months, most likely at the May policy meeting. However, the less encouraging nature of January s raft of UK PMIs and persistent uncertainty relating to Brexit limited the strength of the pound. Comments from chief EU negotiator Michel Barnier prompted a particularly sharp retreat for GBP exchange rates, as he noted that a transition deal is still not a given. With markets still lacking any particular sense of clarity over the Conservative government s aims for its future relationship with the EU, the appeal of the pound remains relatively fragile. Confidence in the euro, on the other hand, picked up on the back of news of a breakthrough in German coalition talks. The prospect of an end to four months of political limbo gave the euro plenty of cause for cheer, even if the Eurozone economy showed signs of having lost some of its momentum at the start of Nevertheless, with the European Central Bank (ECB) looking set to maintain a rather dovish policy outlook in the near term the upside potential of the euro was still somewhat diminished. What do you need to look out for? Developments surrounding Brexit are likely to remain the major influence on the GBP/EUR exchange rate for some time to come. Unless Theresa May s government can offer some greater sense of clarity on the issue the pound s ability to strengthen is likely to be restricted. If the Eurozone economy demonstrates fresh signs of strength in February s PMIs, meanwhile, the euro could find further cause to strengthen. It s also a fact that 4 times as many men ride bikes as women. Whether you are a total beginner, looking to ride more regularly or just want to enjoy social cycling, we have loads of ways to help you get on that bike! Riding on your own can be great fun, you can go where you want, when you want, and stop whenever you want and it also gives you time to think etc, However riding in or with a group can be even more enjoyable. You can make new friends, learn some cracking new routes, learn new skills and techniques, work harder, cycle further, improve your stamina and generally have more fun and post ride socialising. It s also a great way to improve your stamina whilst discovering the local scenery. Our aim is to promote Health and Wellbeing through cycling and help women to recapture the thrill of cycling or discover it for the first time. How to get started All you need is a bike and a safety helmet. If you don t have a bike we can advise you or hire you one to try and see if you are going to enjoy it. We try and set up, adjust and customise everyone s bike to suit their size and shape to make your ride more comfortable. Safety in numbers When we ride in a group and where the road conditions allow, we aim to cycle two abreast, ideally alongside a partner you can match the pace with comfortably. We are all responsible for our own safety - and the safety of others. If you are at the front take care not to ride too close to the gutter, you re the eyes and ears for the group, it s up to you to see the potholes, parked cars, joggers, other cyclists etc, and to tell the rest of the members by use of hand signals. No matter where you are in the group you must pass on all information to the person behind you without making any unpredictable movements. But though this is true, it doesn t answer the more interesting question - why do we overeat in the first place? Why do I sometimes feel compelled to eat that bit of cake or bar of chocolate although I know I am going to regret it a few minutes later? Is it just greed - or is something else going on? Although self-control is important, there is mounting evidence that stress plays a significant part in weight gain. Chronic stress disrupts our sleep and our blood sugar levels. This leads to increased hunger and comfort eating. And that then leads to further disrupted sleep, even higher levels of stress and even more disrupted blood sugars. In time, this can lead not only to unhealthy levels of body fat, but also to type-2 diabetes. To see what can happen, Dr Giles Yeo, a member of the Trust Me, I m a Doctor team, decided, with the help of scientists from Leeds University, to put himself through a particularly stressful day. The Leeds scientists started by asking Giles to do something called the Maastricht Stress Test. They put him in front of a computer and made him rapidly subtract a number, 17, from another number, 2,043. He kept making mistakes, which for someone like Giles is particularly stressful. Then they got him to put his hand in a bath of ice-cold water and hold it there. Before and after these tests, the Leeds team measured Giles s blood sugar levels. Our blood sugar levels rise when we eat and, in a healthy person like Giles, they quickly return to normal. But what the Leeds team found was that on the day when Giles was being deliberately stressed, his blood sugar levels took three hours to return to normal - some six times longer than on a previous, stress-free day. The reason this happens is that when you are stressed, your body goes into fight or flight mode. Your body thinks it is under attack and releases glucose into your blood to provide energy for your muscles. But if you don t need that energy to run away from danger, your pancreas will pump out insulin to bring those blood sugar levels back down again. These rising levels of insulin and falling blood sugars will make you hungry - which is why you crave sugary carbs when you are stressed. The same sort of thing happens when you have a bad night s sleep. A recent study carried out by researchers at King s College, London, found that if you sleep-deprived people they would consume, on average, an extra 385kcal per day, which is equivalent to the calories in a large muffin. Children also get the munchies when they haven t had enough sleep. In another recent study, researchers took a small group of three- and four-year-olds (all regular afternoon nappers) and not only deprived them of their afternoon nap, but also kept them up for about two hours past their normal bedtime. The following day, the children ate 20% more calories than usual, particularly more sugar and carbohydrates. They were then allowed to sleep as much as they wanted. The day after that, they still consumed 14% more calories than normal. So how can you reduce daily stress? Breathing stress away Here s a breathing technique, recommended by NHS Choices, which I find effective. You will get the most benefit if you make it part of your daily routine. You can do it standing, sitting or lying - whatever is the most relaxing. Start by breathing in as deeply as you can, through your nose, without forcing it, to a count of five Then, gently exhale, through your mouth, to a count of five Keep breathing in through your nose and out through your mouth - steadily Keep doing this for three to five minutes One of the first things I would strongly recommend is to try to get a good night s sleep. This is easier said than done, but NHS Choices provides some useful tips. You could also try some well established stressbusting techniques - such as exercising, gardening, mindfulness or yoga. Stress can disrupt sleep - and lead to comfort eating When I recently tested them, with the help of Prof Angela Clow, a stress expert from the University of Westminster, the mindfulness came out on top. But a key finding of our study was you really only got benefit if you enjoyed it. So do try different things and see which works best for you! Brian Kelly, known as The Points Guy, clocks up about 300,000 miles in the air every year SECRETS OF GETTING A GOOD NIGHT S SLEEP ON A PLANE Getting good rest while aboard is not always easy. Here s how the well-travelled manage to get some shuteye. Brian Kelly is the type of traveller almost unheard of among frequent flyers a rare breed who actually enjoys sleeping at 30,000 feet. Kelly, also known as The Points Guy, is an influential New Yorkbased blogger who quit Wall Street to write about airline points programmes. He clocks up about 300,000 miles in the air every year many of those on the long-haul flights most travellers dread. I get great sleep on planes. I like travelling first class to Asia and Australia because I can get a full sleep-cycle in, I will sleep for eight or nine hours, says Kelly. While he does sometimes travel in economy for domestic US flights, he flies internationally in first or business class. People pay for first class to get total privacy, Kelly says. You are in your own cocoon rather than in an openair seat where the cabin is much louder, and people near you get in your space. The new phase of luxury sleeping on aeroplanes is not seeing anyone else. For most though, flying economy class involves jostling for elbow room and trying to get some shuteye against the sound of a roaring jet engine. Even so, there are some tips and tricks from the experts to help you sleep like you re one of the privileged few at the front of the plane. Personal space The difference between economy and luxury flying is vast and it s not all about legroom, says Jamie Zeitzer, an associate psychiatry and behavioural sciences professor at Stanford University and an expert in circadian rhythms. It s not just that the seats lie flat which definitely helps it s that there is nobody touching you. There s no one sitting right next to you. The psychological aspect of it is really quite considerable when you can physically stretch out your body and your mind, it makes a big difference, he says. But what if this lieflat experience is just a pipedream? What makes sleeping on a plane so much harder than on land? For most travellers, a lack of By Katie Beck privacy and personal space; dry, recycled air; turbulence and noise are a few factors that make it really hard to fall sleep. But Zeitzer says two big barriers to sleep are actually within our control: stress and anxiety. There s the social stress: you have no space, and there s the physical stress: Can t afford a lie-flat bed? There are other ways to get a good night s sleep that don t include stretching out on the floor you are physically compressed into your seat, he says. The causes of anxiety vary person to person, but, fear of flying aside, it s the pressure to fall asleep that keeps most people wide awake, Zeitzer says. Sleep is unique and there is no universal method for dozing off. But Zeitzer has two strategies that can at least help lessen the disruption. The first thing, he says, is try not to think about it. So, it s easier said than done, but if you can find a way to not worry about falling asleep, that s the easiest thing to fix, he says. The second thing is to mitigate the anxiety by zoning out and imagining yourself elsewhere. It s about taking yourself out of that stressful claustrophobic positioning that you have in the plane. Zeitzer recommends getting some real or imagined breathing room. An eye mask with noise-cancelling headphones and some music can block out a lot of the world, he says. Sleep strategies There are all manner of solutions to these problems. Some bring special pillows or headphones. Others swear by melatonin supplements, a naturally- occurring hormone involved in sleep cycles widely thought of as gentle sleep aid. However, Zeitzer advises caution; since it is an unregulated substance there are few reliable studies on its side effects. Finally, plenty of people still drink enough alcohol to blot out their surroundings, and many opt for sleeping pills. Some combine the two but it s a risky move, warns Betty Thesky, a flight attendant with 30 years experience. She says: I ve seen grown men lie down on the floor and stick their head in the aisle. It s dark in the cabin; someone is going to step on your face! I see that all the time. People end up in jail, they take their clothes off, they try to get into seats with strangers, they do all kinds of crazy things so I really do think it s dangerous. For If this scene from 2011 s Bridesmaids is anything to go by, mixing pills and booze is not a great idea Thesky, thinking ahead and a sharp eye are a better option. She s always surprised by people sitting crammed next to each other at the front of the economyclass cabin when there are often seats free further back. When I m a passenger, I ve got eyes everywhere, looking to see if there s a place that I can scoot into, and you need to move quickly because the good seats will get taken fast. She also brings a blanket, travel pillow, essential oils and I will have a drink or two, which I do think helps but don t do too much! I will watch movies and tell myself I m going to do something else to get my mind off of sleeping. Kelly says it also helps to find out which type of plane you are flying on ahead of time. The A380 is my favourite, he says, it s the quietest plane in the sky, the newer aircraft are quieter and easier to sleep on. He advises a window seat in the middle of the cabin away from the engine, galley and bathrooms for optimal quietness. Spending thousands of pounds or dollars on the most premium seats won t change the fact that you are hurtling through the sky with hundreds of other people. But if you can create a feeling of privacy and space around you and stop stressing about getting to sleep, you might just get some shuteye after all. THE REAL REASON WHY SPANIARDS EAT LATE Many travellers believe Spain s late meal times are a reflection of the country s laid back attitude, but that couldn t be further from the truth. It is 10pm in the Madrid neighbourhood of La Latina, one of the city s oldest areas, and the cobbled streets thrum with the sounds of people enjoying plates of gambas al ajillo (garlic prawns) and Cocido Madrileño (a hearty chickpea, pork and chorizo stew). Restaurants are bustling at an hour when, in most other countries, chefs would be hanging up their aprons for the night. While travellers might attribute Spain s late meal times to the country s laid back Mediterranean attitude, the real reason is a little more peculiar. Spaniards are living in the wrong time zone, and have been for more than 70 years! Glance at a map and you ll realise that Spain sitting, as it does, along the same longitude as the UK, Portugal and Morocco should be in Greenwich Mean Time (GMT). But Spain goes by Central European Time (CET), putting it in sync with the Serbian capital Belgrade, more than 2,500km east of Madrid. Spaniards are living in the wrong time zone, and have been for more than 70 years. So why are Spaniards living behind their geographic time zone? In 1940, General Francisco Franco changed Spain s time zone, moving the clocks one hour forward in solidarity with Nazi Spain goes by Central European Time, putting it in sync with Serbia Germany. For Spaniards, who at the time were utterly devastated by the Spanish Civil War, complaining about the change did not even cross their minds. They continued to eat at the same time, but because the clocks had changed, their 1pm lunches became 2pm lunches, and they were suddenly eating their 8pm dinners at 9pm. After World War II ended, the clocks were never changed back. However, in 2016, Spanish Prime Minister Mariano Rajoy announced that the government was working on a plan to implement a new workday schedule ending at 6pm as opposed to 8pm. One important element of the plan was evaluating the possibility of changing Spain s time zone from CET to GMT something that has sparked a heated discussion throughout the country. Being 60 minutes behind the correct time zone means the sun rises later and sets later, bestowing Spain with gloriously long summer evenings and 10pm sunsets. Those who run Spain s tourist resorts believe that more sunlight is a large draw for visitors. The regional government of the Balearic Islands which include Mallorca, Menorca and Ibiza is strongly against returning to GMT and has even campaigned to maintain year-round summer time (CET+1) to allow visitors to take full advantage of the region s mild winter climate. But for many Spaniards, living in the wrong time zone has resulted in sleep deprivation and decreased productivity. The typical Spanish work day begins at 9am; after a two-hour lunch break between 2 and 4pm, employees return to work, ending their day around 8pm. The later working hours force Spaniards to save their social lives for the late hours. Prime-time television doesn t start until 10:30pm. Meanwhile, in the northwestern region of Galicia, the sun doesn t rise until after 9am in winter, meaning that residents are starting their day in the dark. With work days ending at 8pm, Spaniards save their social lives for the late hours The fact that the time in Spain doesn t correspond to the sun affects health, especially sleep, said José Luis Casero, president of the National Commission for the Rationalization of Spanish Schedules, an organisation that has been campaigning for Spain to return to the correct time zone since If we changed time zones, the sun would rise one hour earlier and we d wake up more naturally, meal times would be one hour earlier and we d get an extra hour s sleep. Spaniards have traditionally coped with their late nights by taking a mid-morning coffee break and a twohour lunch break, giving them the opportunity to enjoy one of the country s most famous traditions: the siesta. It doesn t fit with reality. Changing the workday would threaten Spaniards customary naptime, although whether or not citizens would mind is still up for debate. A January 2017 study by research company Simple Lógica found that less than 18% of Spaniards nap regularly, while nearly 60% never take a siesta. Meanwhile, those who do nap express frustration when changes in their daily routine prevent them from sleeping midday. We should really banish the siesta in Spain because it doesn t fit with reality, Casero said. And with the change of time zone bringing meal times forward and giving us an extra hour of sleep, there would be less need for a rest at midday. When it comes down to it, economist Nuria Chinchilla, an expert in work-life balance at the Instituto de Estudios Superiores de la Empresa business school in Barcelona, feels that quality of life for Spaniards is more pressing than preserving an extra hour or two of evening light for tourists. We have continuous jetlag, she said. Tourism will always be there and tourists don t care. The number of hours of sunlight will be the same, whether it is an extra hour in the morning or in the evening.

By Adam H Graham There was a bite in the cold Alpine fog lingering over the resort town of Fronalpstock in Switzerland s Canton Schwyz. I wiped my wet boots on the mat and entered Gipfelrestaurant Fronalpstock, a woodlined mountain tavern on the edge of the snowcapped Schwyzer Alps that overlooks the eerily turquoise Urnersee. I d been trekking up and down steep switchback trails most of the morning; my legs were aching and my stomach was growling. Before I even opened the lunch menu, I knew exactly what I was going to order: Älplermagronen, the Swiss version of macaroni cheese. The dish, which translates to Alpine herder s macaroni, is ubiquitous on restaurant menus from Appenzell to Zermatt. And, as most Swiss will tell you, it tastes better when you ve earned it, as I had hiking that morning. Älplermagronen is usually made with elbow macaroni, locally called magronen or hörni, because it s shaped like the horns of native chamois and ibex. The pasta dish is fortified with cream and gooey melted cheese often AOPprotected Gruyère from western Switzerland, but sometimes local alpine cheeses made from cows grazing the very same mountain it is served on. There s a logistical reason behind this simple dish Älplermagronen got its name because the shepherds who lived on the alp with their cows had to carry up all their own food, explained Paul Imhof, author and food historian of Das Kulinarische Erbe der Schweiz, a five-volume set of books on the history of Swiss cuisine published in Dry pasta is light to carry; cheese [the shepherd] made himself. So here in Switzerland, there s a logistical reason behind this simple dish. Älplermagronen, called Macaroni du Chalet in French-speaking Switzerland, varies from canton to canton; the version that arrived at my table was teeming with potato slivers and topped with crunchy roasted onions. Although it lacked the slices of smoky bacon or ham often found in the dish, it was smartly served with a cold, sweet ladleful of apfelmus (apple sauce) to cut through the stodginess. It was not the best I d had, nor the worst. But it was warm and restorative and as natural a fit to the Swiss Alps as cow bells, gondolas and yodels. Many countries have a profound love and deep historical connection to a version of this dish including the United States, Canada, the United Kingdom, France and of It s possible that macaroni cheese s origins may in fact trace back to the Swiss Alps course Italy, where pasta was first popularised in Europe. But with a trail of clues pointing to the Alps, it s possible that macaroni cheese s origins may in fact trace back to Switzerland. Americans especially love to claim macaroni cheese as their own, and indeed Kraft invented the boxed version using macaroni in 1937 at the height of the Great Depression, helping popularise it worldwide. But neither cheese nor macaroni were invented in the US, and tracing the dish takes us back centuries and to several accounts about its possible origins. The word macaroni has meant different things to different people over time. It appears in several old cookbooks, but none provide conclusive evidence of how, when or where the macaroni cheese dish evolved into the pasta bake of modern day. The International Pasta Organisation traces the word macaroni to the Greeks, who established the colony of Neopolis (modern day Naples) between 2000 and 1000BC, and appropriated a local dish made from barley-flour pasta and water called macaria, possibly named after a Greek goddess. Liber de Coquina, a cookbook published in the beginning of the 14th Century by an anonymous Neapolitan, contains a recipe for de lasanis, sheet noodles cut into 5cm squares and sprinkled with grated cheese. While historians believe this is the first time that pasta and cheese appear together in print, it s hardly the molten-centred dish we know and love today. England s oldest cookbook, Forme of Cury, written by King Richard II s cooks in 1390, has a Middle English recipe for something called Makerouns, but the recipe is more lasagnelike: Make a thynne foyle of dowh, and kerue it on pieces, and cast Älplermagronen, the Swiss version of macaroni cheese, is ubiquitous on restaurant menus from Appenzell to Zermatt (Credit: Switzerland Tourism) Mrs Beeton s Book of Household Management contains a recipe for macaroni cheese that s similar to today s dish (Credit: Mrs Beeton s Book of Household Management) Switzerland s version of macaroni cheese is often made with AOP-protected Gruyère hym on boiling water & seeþ it wele. Take chese and grate it, and butter imelte, cast bynethen and abouven as losyns [lasagna]. Flash forward nearly 500 years to 1861: the famous and authoritative Victorian cookbook, Mrs Beeton s Book of Household Management, contains a recipe for macaroni cheese that s somewhat similar to today s dish, calling for parmesan or Cheshire cheese and breadcrumbs to be toasted on top of crooked pipe-shaped noodles (more like today s bucatini than short macaroni elbows). More interesting, Mrs Beeton waxes poetic about this macaroni and claims that it s a favourite food of Italy, where Neapolitans regard it as a staff of life. Did you know...pasta itself is neither Swiss nor European in origin; it dates to at least 3500BC in Japan and China, likely spreading to the Middle East and northern Africa via the Silk Road. Some scholars believe that that 7th- Century nomadic Arabs then likely brought it with them while travelling from Libya to Sicily, from where it spread north along the Italian peninsula. This Neapolitan macaroni cheese lineage theory was supported a decade later by French gourmand Alexandre Dumas, who stated that Naples was the homeland of macaroni cheese in his Grand Dictionaire de Cuisine, posthumously published in But he took it a step further, crediting Catherine de Medici as a likely source of how the dish spread north after she moved from cosmopolitan Florence to France in the 1530s to marry King Henry II, bringing with her many food innovations from across Italy. Funnily enough, Dumas himself was said to despise the dish, calling the noodles long pipes of pity and even entering a feud over them with Gioachino Rossini, the Italian composer of the William Tell Overture (an homage to the Swiss folk hero) and a devout macaroni Continued on Page 44...

The spat happened after Dumas asked Rossini to prepare the dish for him, but then refused to eat it. But there s a potential hole in the Neapolitan lineage macaroni cheese theory, one that suggests Beeton and Dumas might have been wrong about attributing the hallowed dish to Naples. Pasta was indeed popular in Naples in the 17th and 18th Centuries, according to National Geographic, for three main reasons: wheat was cheap, pasta-making became industrialised, and the church prohibited meat on certain days, making pasta a filling substitute. Most Swiss will tell you Älplermagronen tastes better when you ve earned it But pasta consortiums and unions in Italy, known for their extensive records of various pasta shapes, had no records of a hollow pasta in Naples in the 14th Century. So, where did the macaroni pasta shape come from? According to Imhof, the first published record of macaroni was in the 15th Century by author and epicure Maestro Martino from Valle di Blenio in the Duchy of Milano, Lombardy, in what is today Ticino, the Italian-speaking part of Switzerland. Martino s landmark cookbook Libro de Arte Coquinaria, published in the 1400s, contains several macaroni dishes, including instructions on how to make the hollow tube pasta by wrapping the dough around a stick, as well as recipes for Maccaroni Romaneshi and Maccaroni Siciliani, both of which are served from boiling pot to plate and garnished with butter, sweet spices and cheese. These recipes are the first that begin to resemble the macaroni cheese we know and love today. But like Beeton and Dumas pipes, the noodles used were much longer than the short elbow macaroni now favoured. And while macaroni recipes from Sicily, Naples and Rome were abundant after the 1700s and often called for cheese, they veered toward Byzantine flavours, often including sweet spices like cinnamon, rosewater and sugar. While up north, near the Alps, the dish was taking a humbler, heartier turn, often simplified to include just pasta, cream, butter and cheese. In the 15th Century, the neighbouring canton of Uri and other central Swiss cantons took over parts of Ticino [from Lombardy] so the trade between Switzerland and Lombardia was frequent, Imhof said. By 1731, Switzerland s Disentis Abbey (about 50km from the Italian border) Älplermagronen is as natural a fit to the Swiss Alps as cow bells, gondolas and yodels mentions in its archives a thread press machine to make hollow macaroni noodles. In 1836, a cookbook from Bern published a recipe for Maccaroni that called for Parmesan or Swiss Emmental cheese and oven-baking. Two years after that, according to Imhof s book, Switzerland s first pasta factory opened in 1838 in Lucerne. And finally, according to Imhof, the world s first commercial production of macaroni as we know it today the short, hollow, hörnishaped elbow was not in Italy, but in Switzerland in Add to this a Swiss cheese production and export culture that dates back millennia, and it s certainly possible that the first real macaroni cheese with hollow elbow noodles was served in Switzerland. Whatever the truth, this humble pasta-withcheese dish has become an ultimate comfort food in a plethora of cultures and countries around the world, each with their own favoured tweaks. But for me, after my hike in the Alps, few dishes could be as satisfying as the Swiss version in front of me. As I sat atop the mountain, refuelling on this king of carb bombs and watching the nearby cows munch on wildflowers, as they have for millennia, I felt certain this dish will be around for a long time to come. Schizophrenia patients calmed by video game People with schizophrenia can be trained by playing a video game to control the part of the brain linked to verbal hallucinations, researchers say. Patients in a small study were able to land a rocket in the game when it was connected to the brain region sensitive to speech and human voices. In time, the patients learnt to use the technique in their daily lives to reduce the power of hallucinations. But this is a small pilot study and the findings still need to be confirmed. The research team, from King s College London s Institute of Psychiatry, Psychology and Neuroscience and the University of Roehampton, says the technique could be used to help schizophrenia patients who do not respond to medication. People with the condition are known to have a more active auditory cortex, which means they are more sensitive Patients in the study had to control the rocket and bring it down to earth to sounds and voices. All 12 patients in the study experienced nasty and threatening verbal hallucinations every day - a common symptom of schizophrenia. To try to control their symptoms, they were asked to play a video game while in an MRI scanner, using their own mental strategies to move a computerised rocket - and in doing so they were able to turn down the volume on the external voices they heard as well. Dr Natasza Orlov, from King s College London, said: The patients know when the voices are about to start - they can feel it, so we want them to immediately put this aid into effect to lessen them, or stop the voices completely. She said all the patients in the study, who each had four turns in the MRI scanner, found that their voices became less external and more internal, making them less stressful. They were also better able to cope with them. Dr Orlov added: Although the study sample size is small and we lacked a control group, these results are promising. We are now planning to conduct a randomised controlled study to test this technique in a larger sample. Prof Sukhi Shergill from King s, and a consultant psychiatrist at the South London and Maudsley NHS Foundation Trust, said the research offered a novel approach for helping patients. While The auditory cortex (in yellow) is hypersensitive in the brains of people with schizophrenia this is preliminary data, it s particularly promising that patients were able to control their brain activity even without the MRI scanning - suggesting that this may be a strategy that people, who have followed the MRI neuro-feedback training protocol, can benefit from at home. The study was published in the journal Translational Psychiatry.

By Suzanne Bearne, Technology of Business reporter We know that plastic waste is a big problem for the planet - our oceans are becoming clogged with the stuff and we re rapidly running out of landfill sites. Only 9% is recycled. Burning it contributes to greenhouse gas emissions and global warming. So could plantbased alternatives and better recycling provide an answer? We have grown to rely on plastic - it s hardwearing and versatile and much of our modern economy depends on it. And for many current uses there are simply no commercially viable biodegradable alternatives. The humble single-use drinking straw is a case in point. Primaplast, a leading plastic straw manufacturer, says greener alternatives cost a hundred times more to make. Biome Bioplastics has developed a full compostable takeaway coffee cup Takeaway coffee cups are another example. In the UK alone we throw away around 2.5 billion of them every year, many of us thinking that they are recyclable when they re not, due to a layer of polyethylene that makes the cup waterproof. One company trying to change this is Biome Bioplastics, which has developed a fully compostable and recyclable cup using natural materials such as potato starch, corn starch, and cellulose, the main constituent of plant cell walls. Most traditional plastics are made from oil. Many consumers buy their cups in good faith, thinking they can be recycled, says Paul Mines, the firm s chief executive. But most single-use containers are made from cardboard bonded with plastic, which makes them unsuitable for recycling. And the lids are most often made of polystyrene, which is currently not widely recycled in the UK and ends up in a landfill. The company has created a plant-based plastic - called a bioplastic - that is fully biodegradable and also disposable either in a paper recycling or food waste bin. Mr Mines believes it s the first time a bioplastic has been made for disposable cups and lids that can cope with hot liquids but which is fully compostable and recyclable. The cup isn t yet on the market, but Mr Mines says he is in talks with a number of retailers. It s not feasible to get rid of plastics completely, says Mr Mines, but instead replace some of Potato starch and plant fibres can be turned into compostable plastics the petroleum-based plastic for biopolymers derived from plant-based sources. Plenty of other companies and research institutes, such as Full Cycle Bioplastics, Elk Packaging and VTT Technical Research Centre of Finland, are working on similar biopolymer solutions that are more environmentally friendly but equally functional as conventional plastic. And Toby McCartney s firm MacRebur has developed a road surface material made from an asphalt mix and pellets of recycled plastic. The plastic mix replaces much of the oil-based bitumen Could plastic roads help to save the planet? traditionally used in road building. What we are doing is solving two world problems with one simple solution - the problems we see with the waste plastic epidemic, and the poor quality of the potholed roads we drive on today, claims Mr McCartney.Since its launch two years ago, the Lockerbie-based firm s hybrid material has been used to build roads across the UK, from Penrith to Gloucestershire. More than five trillion pieces of plastic are floating in our oceans, by some estimates, much of which can take up to 1,000 years to degrade fully. As it breaks up over time, tiny pieces end up being eaten marine creatures. Scientists are particularly worried about the threat to larger filter feeders, such as sharks, whales and rays. Toxins in the plastics pose a serious health risk to them, they warn. Plastic waste has even reached the Arctic. So governments and businesses are starting to act. The UK has committed to eliminating all avoidable plastic waste by 2042, while France has introduced a ban on single-use plastic bags. Norway has been operating a plastic bottle deposit scheme for decades - shoppers receive one krone (9p) back when they deposit a bottle in a collection machine. The UK is considering following suit. And supermarkets are trying to reduce the amount of packaging they use, with Tesco aiming for A giant build-up of plastic was captured by underwater photographer Caroline Power all of it to be recyclable or compostable by But one of the problems with plastics is that many are not easily recyclable. Over in San Jose, California, Jeanny Yao and Miranda Wang, both 23, are focusing on tackling plastics bags and product packaging that is too difficult to recycle. Such plastics are heavily contaminated and cannot be recycled by state-of-theart mechanical recycling, explains Ms Wang. Their start-up BioCellection breaks down these unrecyclable plastics into chemicals that can be used as raw materials for a variety of products, from ski jackets to car parts. We have identified a catalyst that cuts open polymer chains to trigger a smart chain reaction, she explains. Once the polymer is broken into pieces with fewer than 10 carbon atoms, oxygen from the air adds to the chain and forms valuable organic acid species that can be harvested, purified, and used to make products we love. The natural compounds could be used to combat hard-to-treat infections, the team at Rockefeller University hopes.tests show the compounds, called malacidins, annihilate several bacterial diseases that have become resistant to most existing antibiotics, including the superbug MRSA.Experts say the work, published in Nature Microbiology, offers fresh hope in the antibiotics arms race. Drug-resistant diseases are one of the biggest threats to global health.they kill around 700,000 people a year, and new treatments are urgently needed. Soil is teeming with millions of different microorganisms that produce lots of potentially therapeutic compounds, including new antibiotics. As a rule of thumb, the clearer the plastic, the greater the opportunity of being recycled into another product or packaging, she says. Governments need to encourage business to use recyclable packaging and to label it clearly for customers, she argues. In our throwaway society, there haven t been many financial incentives to develop alternative compostable materials. And the idea at New York s Rockefeller University has been busy unearthing them.they used a gene sequencing technique to analyse more than 1,000 soil samples taken from across the US.When they discovered malacidins in many of the samples, they had a hunch it was an important find. They tested the compound on rats that they had given MRSA and it eliminated the infection in skin wounds. The researchers are now working to improve the drug s effectiveness in the hope that it can be developed into a real treatment for people.dr Brady said: It is impossible that we are suddenly going to wean ourselves off oilbased plastics is fanciful, most experts agree. In the next few decades, the global middle class is expected to double, says Ms Wang. Although we can develop more compostable plastics, there is no way we can stop consuming plastics, which have properties that no other material on earth has. While awareness of the plastic waste issue is clearly growing, no-one is claiming there s an easy answer to the problem. New antibiotic family discovered in dirt US scientists have discovered a new family of antibiotics in soil samples. Drugs from dirt Miranda Wang (left) and Jeanny Yao are trying to make unrecyclable plastics reusable again to say when, or even if, an early stage antibiotic discovery like the malacidins will proceed to the clinic. It is a long, arduous road from the initial discovery of an antibiotic to a clinically used entity. Prof Colin Garner, from Antibiotic Research UK, said finding new antibiotics to treat gram-positive infections like MRSA was good news, but would not address the most pressing need. Our concern are the so called gramnegative bacteria which are difficult to treat and where resistance is on the increase, he said. Gram-negative bacteria cause pneumonia, blood and urinary tract infections as skin infections. We need new antibiotics to treat this class.

There are barriers to trade in the EU The statement that there are no barriers to trade with EU countries isn t entirely accurate. We can roughly sort barriers on trade into two groups: taxes levied on imports (tariffs), and everything else (non-tariff barriers). There are no tariff barriers to trade with other members of the single market, but there are non-tariff barriers. These can be things like product standards and regulations that make trade harder. This sort of barrier is a particular issue in the services sector. People on both sides of the Brexit debate agree that, when it comes to free trade, non-tariff barriers are becoming a more important issue than tariffs. Under World Trade Organisation rules the EU won t be allowed to punish the UK for leaving. We don t yet know what the postmembership relationship with the EU will look like. But we do know some things already. If the UK and the EU can t agree on a specific trade agreement, then trade would take place under World Trade Organisation rules. The EU would not be allowed to discriminate against the UK specifically, and we would face the same tariffs that any country without a free trade agreement with the EU would. Trade with Europe could be lower if we left The bold claim that all the trade would continue with the EU is speculative. The only way to know for sure is to leave. There are good reasons to doubt that things will be as simple as everything continuing as it is. While you don t need to have a free trade agreement to trade with a country (or indeed a bloc of countries), it certainly helps. There are a number of reasons why trade with the EU might become more costly after Britain leaves. Even if Britain negotiates an agreement without tariffs, increasing differences in regulations or tighter integration within the EU could see a fall in trade relative to staying in. They contacted Gary and Lynn Routledge (owners of Cyclogical in Quesada) to run the evening for them. Gary and Lynn have organised and run many traditional Burns Suppers here in Spain (and in Scotland!). Gary originally organised them in the Sergeants Mess during his service in the RAF Regiment. The evening s entertainment began with Paul Cameron (a Cyclogical cyclist) reciting the Selkirk Grace, followed by the piping in of the haggis by local Torrevieja piper, Donnie McDiarmid, and transported by mine host Barry Henderson. The procession started at the front door and ended at the top table where it was addressed, stabbed and toasted by Master of Ceremonies Gary Routledge. Once the Haggis was cut wi ready sleight trenching your gushing entrails bright, like ony ditch and then o what a glorious sight, WARM, REEKIN AND RICH, it was then piped back to the kitchen to be served up to the hungry guests. The restaurant, which seats 56 people, was fully booked with a waiting list, which was a great The guest of Honour, the Haggis! Piping in the Haggis start to the year. Members of team Cyclogical and their partners had over half of the seats and did the reciting of various poems throughout the evening. The meal started with traditional Scotch Broth followed by Haggis, Neeps and Tatties with a beautiful Whisky sauce, followed by Cranachan (a traditional Scottish dessert made from raspberries and cream flavoured with honey, whisky and toasted oatmeal) for dessert then coffee and tablet. Donnie played the pipes all night between courses and poems and the evening finished with Cyclogical cyclist, Dave Sniffer Robertson saying Grace After Meal. He then went on to toast The Lassies, which was followed by the Response by mine hostess, Helen Henderson. After all the speeches and formalities were over, Dave Sniffer Robertson went on to entertain us by Dave Sniffer Robertson playing his acoustic guitar for the rest of the evening, Donnie also played a few more tunes, finishing with Auld Lang Syne to conclude a great evening. Thanks to a great Piper and great Haggis (which was made in Scotland and flown across from Aberdeen with Helen and Barry s Mam each taking 5kg in their cases). 52 52 The CBPG Magazine 16th February - 14th March 2018 Issue 16 The Costa Blanca Property & Business Guide MARIA AND THE PINK LADIES NEWSLETTER - FEBRUARY 18 On Saturday 3rd February Maria and the Pink Ladies and Panthers staged their annual event to celebrate World Cancer Day at Zenia Boulevard for the 4th consecutive year. Zenia Boulevard management donated over 500 cactus plants for Maria and her group of Bruno came to us as a puppy and lived here his whole life, he would have been 13 years old on 6th February! He knew the finca better than anyone else. When the volunteers let him out, he went off on his own for a walk - most of the time he was back in 20 minutes, but sometimes longer when he was chasing a rabbit or cat, when he forgot the time! It must have been the summer of he was gone for 3 hours, that was the length of time he would go out for a walk with us on his lead - we were very worried that something might have happened to him, but he turned up safe and sound, much to everyone s relief! Right to the end, Bruno was happy and excited to fundraisers to hand out to members of the public for a small donation. Although a little chilly, the sun show us around - he loved all the girl volunteers and they loved him. The bad news arrived at the end of December - Bruno was diagnosed with arthritis and it was hurting all of us see such a strong dog suffering. For the last shone down on the event.
