Technical Knowledge/Qualifications 1.1 Organisational Structure The organisational structure is presented overleaf. The Carroll s Cross facility is part of the Dawn Meats Ireland Unlimited Company group. The top two layers of the chart relate to group personnel while the third sixth layer relate to personnel working directly in the Carroll s Cross facility only. The group Environmental Managers provide support to the site-specific General Manager and Environmental Coordinators. The General Manager will be the responsible person on site with regard to the licence and will have ultimate responsibility for reporting to the EPA. 1.2 Key Personnel The key personnel with regards to management of the licence will be as follows: Peter Roche (General Manager) Peter Roche has over 20 years experience in site and general management. In his role of General Manager in Carroll s Cross, Peter has the following responsibilities; - Managing of Dawn Meats Carroll s Cross s four business units; - P/L accountability for all four business units; - Overall management for Production, Technical, Maintenance, HR, Health & Safety, Planning, Projects, CI, Purchasing and Environmental; - Using lean/6sigma tools to drive improvements; - Managing a multi-disciplined site; - Continue to keep Dawn Meats Carroll s Cross as a Leader in Sustainability. Peter holds a Master of Science in Strategic Quality Management Systems (Master Black Belt Lean/6sigma) form the University of Limerick in 2018 and a Specialist Diploma in Quality Management (Black belt Lean) from the University of Limerick in Peter M c Sherry (Environmental Co-Ordinator) Graduated from the University of Limerick in 2015 with a 2.1 honours degree in B.Sc. Environmental Science. Environmental Co-Ordinator in Dawn Meats since Aug Green belt in Lean Business systems. Environmental Policy. Environmental Consultant with JRE Ltd. from September 2015 December Deputy Environmental Co-Ordinator in Dawn Meats since December Both Peter M c Sherry and Billy Shanahan are responsible for day to day activities on the site such as environmental monitoring and measurement, management of records, preparing data and reporting on environmental performance to the senior management team, delivering training and awareness programmes, reporting through EDEN and implementing environmental projects.
